SWEET & SPICY RIBS

For the Superbowl, I was going to bbq some pork ribs but it was so cold outside that I decided against it. So I thought... hot ribs instead of hot wings. So here's an alternative to bbqing in the bad weather and a change from the wings. The sweet & spicy sauce idea was my mom's. Thanks, Mom!

To start you will need: 

 

* S&P

* garlic powder

* 1 lemon

* thyme

* 1/2 cup soy sauce

* 1 slab of pork ribs

 

 

 

 

 

 

You'll need to chop up the ribs in strips like pictured to the left. 

 

Place them all in a flat marnating container and sprinkle with all the ingredients. They will need to marinade for at least a few hours. Flip them a few times to make sure it gets coated all around. 

Then you will need:

in a medium size bowl..

 

* 1/4 cup cornstarch

* 1 cup flour

*  S&P

* 1 tsp garlic powder

After marinating, toss ribs in the flour mixture. Coat and let sit for a few minutes. This will allow the flour to dry out a bit and stick to the meat better when you fry in the oil. 

 

Then you will need: 

 

* vegetable oil in sauce pan or pan of your choice.

 

It will need to come up about 2" deep of oil. 

cook on medium heat. 

make sure to test the oil before placing the ribs in. You do not want to place the ribs in while the oil is cold. The flour will soak up the oil and it will  be soggy with oil and will not be crispy.

 

Once you've got your ribs cooked and crisp, place them in a heat proof bowl then:

 

sprinkle with a tiny bit of S&P (if desired)

garlic powder

chili powder

red pepper flakes

hot sauce

black pepper 

and finally drizzle all over with honey. 

 

The ribs should still be hot and the honey will just melt and will be able to liquify. All the ingredients will coat the ribs as you toss them around. 

 

I leave some plain so the kids can eat the ribs as well. It's still tasty due to the marinade.
